Nel corso del processo di raffinazione, la maggior parte dei micronutrienti del grano (che avrebbero un’azione benefica sul nostro organismo) vengono persi e la farina diventa una polvere bianca, assai fine, per la quale risulta completamente priva dagli ingredienti salutari, che contiene solo ed esclusivamente amido e molti zuccheri. Un team di ricercatori della School of Public Health di Harvard hanno pubblicato i dati di una loro ricerca che riguardava il consumo di farina integrale associandoli ad una diminuzione del 9% della mortalità complessiva e fino al 15% della mortalità dovuta alla presenza di malattie cardiovascolari.
