Cantucci made with panettone are a great way  to use up left over panettone!

Ingredients:

300 gr of panettone

2 eggs

200 gr flour

130 gr sugar

150 gr almonds, chocolate chips, or both

1teaspoon baking powder

Crumble the panettone. In a large bowl beat the eggs with the sugar until light and foamy. Add the crumbled cake, mix well, then mix the flour with the baking powder: the dough should be quite substantial. Add the almonds to the dough trying to distribute fairly evenly, if necessary reversed the dough on a plane and do this operation by hand mixing. At the end, divide the dough into two baguette loaves, flatten slightly and then bake at 180 degrees for 30-35 minutes in oven. Once ready and lightly browned, remove from oven and allow to cool for 10-15 minutes before cutting otherwise they will crumble a lot. Once slightly cooled, cut into slices about one cm thick or so and place on the grill of the oven, put them back in the heat, about 160 ° ventilation, to brown them and dry well.

Fortune Cookies

Fortune Cookies

Fortune Cookies can be made at home…have you ever wanted to make them?

Here is the recipe:

  • 3 egg whites
  • 3/4 cup sugar
  • 1/2 cup melted butter
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon Almond extract
  • 3 tablespoon water
  • 1 cup flour
1. Preheat oven to 375 degrees F.
2. Line a sheet pan with parchment paper, and have your fortune strips ready to go.
3. In a stand mixer (or large bowl with a hand mixer), whip the egg whites and sugar on high speed for 2 minutes or until frothy.
4. Add melted butter, vanilla, almond extract, water, flour and beat after each addition. Make sure each ingredient is absorbed before adding the next.
5. With a tablespoon, spoon the batter onto the parchment paper and spread it out into an even 3 inch circle. I recommend not doing any more than 2-3 at a time, since they set very quickly and you will not be able to fold more than that.
6. Bake cookies for 7-8 minutes or until the edges brown slightly. If you let them brown too much, they will snap when you shape them. Conversely, if they don’t brown a little bit, they will also break (but tear, rather than snapping).
7. Remove them from the oven and quickly scoop the circle off, and fold your fortune cookie in half, into a semicircle. Slip your note into the cookie (quickly) because if you slip it in right at the beginning, the cookie will be too hot and your paper will stick to the cookie.
8. Place semicircle cookies onto the edge of a cup, and quickly fold the ends down, to shape into a fortune cooking.
9. Hold the cookie down to let it set, and stick it in a muffin tin to let it cool and hold its shape.
You can leave them like this or also decorate them by dipping part of the cookie in melted chocolate and cover them in sprinkles!
Custom-Fortune-Cookie6
Ricetta per i famosissimi Biscotti della Fortuna – Fortune Cookies
Ingredienti:
– 3 albumi

Red Velvet Chocolate Chip Cookies

Red Velvet Chocolate Chip Cookies.

Red Velvet Chocolate Chip Cookies…

Ingredients:

  • 1 and 1/2 cups + 1 Tablespoon (198g) all-purpose flour
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened to room temperature.
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 egg, at room temperature
  • 1 Tablespoon (15ml) milk
  • 2 teaspoons vanilla extract
  • 1.5 Tablespoons red food coloring
  • 1 cup (180g) semi-sweet chocolate chips

Toss the flour, cocoa powder, baking soda, and salt together in a large bowl. Set aside.

Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Scrape down the sides and the bottom of the bowl as needed. Switch the mixer to medium speed and beat in the brown sugar and granulated sugar until combined. Beat in the egg, milk, and vanilla extract, scraping down the sides and bottom of the bowl as needed. Once mixed, add the food coloring and beat until combined. Turn the mixer off and pour the dry ingredients into the wet ingredients. Turn the mixer on low and slowly beat until a very soft dough is formed. Beat in more food coloring if you’d like the dough to be redder. On low speed, beat in the chocolate chips. The dough will be sticky.

Cover the dough tightly with aluminum foil or plastic wrap and chill for at least 1 hour.

Preheat oven to 350F degrees. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

Scoop 1.5 Tablespoons of dough and mold into a ball, as pictured above. Place 9 balls onto each baking sheet. Bake each batch for 10-11 minutes. The cookies may have only spread slightly, that is ok. Simply press down on the warm cookies to slightly flatten and form crinkles.

Peanut butter and jelly cookie cups

Peanut butter and jelly cookie cups.
Cookie Cups:
    • 1 3/4 cups all purpose flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking soda
    • 1/2 cup butter, softened
    • 1/2 cup white sugar
    • 1/2 cup creamy peanut butter
    • 1/2 cup packed brown sugar
    • 1 egg, beaten in a separate bowl before adding
    • 1 teaspoon vanilla extract
    • 2 tablespoons milk
Frosting:
  • 1 and 1/2 cup creamy peanut butter
  • 8 Tbsp unsalted butter, room temperature
  • 1/4 tsp. kosher salt
  • 1/2 cup heavy whipping cream
  • 1 and 1/2 tsp. vanilla
  • 2 and 1/4 cup powdered sugar
  • Strawberry or Raspberry jam/jelly, for filling and topping (optional)

Instructions

Cookie Cups:
    1. Preheat oven to 375 degrees F.
    2. Mix together the flour, salt and baking soda; set aside.
    3. Cream together the butter, sugar, peanut butter and brown sugar until fluffy.
    4. Beat in the egg, vanilla and milk.
    5. Add the flour mixture; mix well.
    6. Shape into balls  and place each into a greased jumbo muffin tin.
    7. Bake at 375 degrees for about 16-17 minutes – make sure they aren’t getting too brown on top.
    8. As soon as you take them out of the oven, use something with a circular bottom to press into the middle of the cups and make craters. Whatever you use should be slightly less than the width of the cookie.
    9. Let cool completely in the pan and carefully remove from pan. Run a butter knife around the edges of the cooled cookies to loosen and gently lift out. I didn’t need to do this, I just pulled them out with my fingers.
    10. Fill each crater with your choice of jelly or jam
Frosting:
    1. Place the peanut butter, butter, and salt in the bowl of a stand mixer. Beat on medium speed, just until thoroughly combined.
    2. Add the remaining ingredients and combine all together by beating on medium speed.
    3. Turn the speed up to high and beat for 3/4 more minutes, until frosting is light, airy, and fluffy. Be patient! You don’t want a heavy dense frosting for these cookie cups.
    4. Transfer frosting to a piping bag.
    5. Frost the cookie cups once they are completely cooled and the indentations have already been filled with the jelly/jam. Pipe the frosting in high, swirling mounds on top, like frosting a cupcake.
    6. Top with a small dollop of jam/jelly
Store in an airtight container at room temperature for up to 3 days or refrigerator up to 4 days
